Derives the pino LogFormat from the user-facing message format and bot mode.
Parameters
- OptionalmessageFormat: "summary" | "compact" | "ledger" | "emoji"
  Optional user-configured message format.
- OptionallistenForCommands: boolean
  When true, forces phone format for bot output.
Returns "words" | "json" | "table" | "phone"
The resolved LogFormat to use for the logger instance.
